Leah is a Collegiate Member of Tau Chapter (1848) at East Carolina University. Leah was inducted as part of the Gamma Sigma Initiate Class (ΓΣ).

Leah decided to attend ECU because it felt the most like home. She decided to join Phi Sigma Pi because it felt more like a family than an organization to her.

Ingredients:
8oz cream cheese (softened)
8oz sour cream
2 can black beans
1 lime
Harris Teeter Peach Salsa
2c mexican cheese
Tostitos scoops
Instructions:
1. Mix softened cream cheese with sour cream
2. Drain and place 2 cans of black beans on top of mixture (seasoned with lime)
3. Add 1 jar Harris Teeter Peach salsa on top of beans
4. Bake until bubbling (350 for approx 20-25 minutes)
5. Take out dish and add 2 cups mexican cheese on top
6. Place dish back in oven for 5-10 minutes until cheese melted
7. Serve with tostitos scoops chips
